A single confection · since 2015

Opened April 2015 inside Tsukiji's Jogai Market. The shop's single obsession: strawberry daifuku. A 3L-grade strawberry wrapped in Shiga-produced habutae mochi. Halved, the cross-section reveals the fruit — engineered as much for the photograph as for the bite.

Tsukiji Solatsuki opened in April 2015 inside the Outer Market. One signboard, one confection — the strawberry daifuku. A small shop built around a single ambition.

The strawberry is a 3L-grade fruit from a contracted farm in Shiga. The mochi is habutae, also from Shiga. Two materials of nearly the same geography, gathered for a single confection.

A sister brand

The shop later opened a sister brand — Strawberry Mania — in Osaka's Shinsaibashi and Tokyo's Solamachi. The Tsukiji Souhonten remains the flagship, still tucked into a corner of the Outer Market.
