For One Berry
A single fruit, a single confection
Tsukiji Solatsuki opened in April 2015 in a corner of the Outer Market, with one single ambition — to perfect the strawberry daifuku.
Each piece begins with a 3L-grade strawberry from a contracted farm in Shiga, selected at the exact balance of sweetness and acidity that meets the softness of the mochi.
The mochi is Shiga habutae — pressed thin, drawn taut, wrapping the fruit without altering its shape.
"A finished daifuku photographs itself." A confection that needs no stage. That is the shop's only creed.
"For a single fruit, the work of two regions — Shiga and Tsukiji."

From Shiga
A single berry, a single source
South of Lake Biwa, on gentle terraces, a contracted farm grows berries in glasshouses. Cold nights and morning mist off the lake build the fruit's depth of sweetness and clarity of acid.
Harvest is at first light. By eight in the morning the crates reach Tsukiji. Shortly after, the daifuku are in the case.
